As I’m sitting on a plane that is taking me back to Europe I’ll give u a easy guide on how to fold spring rolls. The photographs where taken during my Thai cooking course and these guys where later deep fried in oil. And I know that you know that I know that this is not a good way to cook food.
Lucky for us the smart Vietnamese guys has come up with a healthy alternative with their fresh rolls. The folding technique is the same though and I promise to post a crunchy fresh spring roll recipe here soon. Until then, have a go yourselves.
Place your filling in the middle of your spring roll sheet. Fold in half. Use all your fingers and pull your filling towards you. Start rolling but stop at the middle. Tightly fold each side in. Roll again. Use egg as glue on the last corner. Done. Easy.
