a healthy journey



If you’ve been following this blog for a while you’ll know that I spent 8 days juice fasting on Koh Samui, Thailand, this spring. The whole week was an amazing experience, fasting is such a great way of cleaning your body and clearing your mind, and to be able to do so at a beautiful retreat in Thailand is such a treat.

But if I’m going to be honest, the best thing about the whole cleansing week was when I got to taste the beautiful buffet after my fasting was over. Oh my, the flavors of those crunchy vegetables and the joy of chewing your food again, I couldn’t stop smiling.

The head chef gave me a few recipes from his repertoire and this lush dressing is one of my favorites. I’ve added the avocado to the original recipe to make the dressing even creamier.

Coriander root dressing
~ THE dressing


You will need
1 big bunch of coriander with roots
1 small ripe avocado
1 large juicy lime
1 tbsp light soya sauce
3 tbsp sesame oil

In the Thai cuisine nothing is thrown away, to take the coriander as an example the seeds are used for seasoning, the leaves in salads and the roots (where the most flavor is) in pastes and sauces.
For this recipe to be a proper success you need to buy coriander in a pot. The roots are very fragile so be careful when you pull them out of the soil and clean the dirt of them.

Use the handle of your knife to bruise the coriander roots before chopping them up roughly. Mix all the ingredients in a blender. Ad water until you have the wanted consistency. Pour over your favorite salad, in my case a roasted sweet potato salad with feta cheese and lots of red onion.


Coriander and heavy metals

Cilantro is commonly used in many detoxification programs and has been found to remove heavy metals from the body. And I’m not talking about Metallica or Iron Maiden here, no real heavy metals find their way into your body through deodorants (many contain aluminum), fruits and vegetables (sprayed with pesticides and fertilizers), cigarettes (yup, metals in them too) and ‘silver’ fillings in your teeth – just to name a few.

Heavy metals have been connected with many serious health problems including cancer, heart disease, brain deterioration, emotional problems, kidney disease, lung disease and weak bones.

Ok so you have eaten fruit for a day or two. If you feel that your stomach can handle it you might want to start to incorporate some steamed vegetables or maybe a blended vegetable soup now. Remember you are basically teaching your stomach to digest food again, eat a little, wait a bit and see what happens (you could get stomach cramps if you eat to fast.) if you feel good have a bit more.


This curried mix of blended vegetables might not look that good but oh my it was tasty. So much flavor and it felt awesome to actually have to chew my food again. Tomorrow I’m finally hitting the buffet table, for a week I have been tempted by other hotel guests plates and now it’s (almost) my turn! Yay!

I’m so happy the fasting is over, I know I’ve been writing about glorious coconut water but what about the meat! I tell you it’s been a constant struggle drinking the water but leaving the tasty meat in its shell. With this afternoons nut I scoped out a few bits of this lovely meat and … instantly got full – bummer.

Now you want me to tell you about the nutritional benefits, don’t you!? Keep on reading..


Why did I get full so fast?
Coconut meat is high in fiber, one cup containing 7.2 g which is more than 20 percent of the recommended daily amount for most adults! Fiber assists in the digestion process by adding bulk to the stool, which helps to move food through the digestive tract. Fiber can also help you feel full, which is important if you are trying to eat less to lose weight. The Center for Nutrition Policy and Promotion recommends consuming 14 g of fiber per every 1,000 calories consumed, which means most children need 17 to 25 g per day and most adults need 25 to 36 g per day.

How about the fat?
One cup of raw coconut meat contains 283 calories, most of which come from its 26.8 g of fat. While most plant foods contain very little saturated fat, coconut meat contains a large amount, with 23.8 g per cup. However, unlike other saturated fats, which are long chain fatty acids, most of the fat in coconut is a medium chain fatty acid. Medium chain fatty acids are broken down much faster than long chain fatty acids, so they do not contribute to high cholesterol, as long chain fatty acids do.

And the minerals?
Coconut meat is high in the trace mineral manganese, with one cup providing 67 percent of the recommended daily amount for women and 52 percent for men. Manganese helps you metabolize both fat and protein. It also supports both the immune and nervous systems and promotes stable blood sugar levels. Manganese also helps your body use other nutrients such as iron, thiamine and vitamin E.

Coconut meat also provides a significant amount of two other minerals: potassium and copper. One cup provides 14 percent of the recommended daily amount of potassium and 39 percent of copper. Potassium, along with sodium, is essential for proper fluid balance within your cells. It is also necessary for proper heart function and muscle growth. Copper is important for the production of red blood cells and assists with your sense of taste.

Good morning. It’s my second last morning here at Samahita so I got up extra early and just been sitting by myself on the beach with camera in hand.


I have mixed feelings about leaving tomorrow, this is such a magical place and being here really allows you body and mind to relax. At the same time I’m very exited with continuing our future travels and my feet are getting a bit itchy to get moving. I guess there is a time and place for everything and I’m very grateful for this lovely week here at Samahita.

In order to experience long term benefits from you detox it’s important to make a appropriate transitioning back to normal food. When you gradually work your body back into digesting food you will prevent any problems occurring.


The first day or two you should only eat fruit as your solid food and choose a fruit that is easily digested by your body like watermelon, honey dew or papaya. Don’t mix your fruits and allow your body to digest it before drinking any vegetable juice afterwards. You can keep on eating psyllium husk for fiber and remember that your body is still detoxing even if you are no longer fasting.

Many people think that the transitioning face is difficult and want to get back to “normal” food as soon as possible but its important to pace yourself. Your body is becoming very sensitive during a detox and if you start to consume strong stimulants or heavy toxic foods immediately afterwards you might lodge toxins deeper into you tissues.

We are getting close to the end of my juice fast. Since I will keep on traveling in Thailand after this detox and starting with taking a train all the way to Bangkok I’m thinking about breaking my fast tonight with some fruit. My body will keep on detoxing but I’ll give my stomach a chance of slowly getting back to digesting real food.


Transitioning back to normal eating should always be gradual. I will make a post about post-detox-eating later today. The photo is this early morning view from my hotel room. Now – tea and yoga.
